Bread, Egg and Bacon Cups
This is a super simple recipe but looks lovely on the Easter breakfast or lunch table. You do need a muffin baking tray to make it easier but you can also use tin foil baking tray cups.
Ingredients (for 6 bread cups)
3 slices of whole wheat bread
6 free-range eggs
6 slices of free-range breakfast bacon
Instructions
Preheat the oven to 180°C
Fry the bacon in a frying pan and let it drain on a plate with kitchen paper.
Line the muffin tray with baking paper. Cut the bread in half and place a slice of bread in each cup. Press it down well.
Crack an egg in each cup and then put a slice of fried and drained bacon in each cup.
Bake in the oven for about 15-20 minutes.
