caesar salad to go

I love a Caesar Salad, to me it’s the perfect salad as it’s tasty and it fills me up. There must be a “master” recipe but I’m going to share how I prepare my version of the Caesar Salad. It’s actually really simple and quick to prepare especially when you make everything in bulk and store it in the fridge. You can have your own Caesar Salad bar ;o)

This is how I build my Caesar Salad:

  • Romaine lettuce

  • Hard boiled egg

  • Chicken

  • Croutons

  • Parmesan cheese

  • Ansjovis

  • Caesar dressing

How to make Croutons

I make croutons from old bread. I cut them in chunks, spread them out on a baking tray, sprinkle them with extra virgin olive oil, season with salt, black pepper and chilli flakes, toss and bake in a preheated oven on 200ºC for 15 minutes. I do take the tray out halfway and give it another good toss. You can store chilled croutons in an airtight container for about a week.

How to make a Caesar Dressing

This is also a version I like and not the “master” dressing:

  • 2 tbsp mayonaise

  • 1 tbsp dijon mustard

  • 2 tbsp white wine vinegar

  • 1 tsp Worcestershire Sauce

I put all the ingredients in a shaker or in a jam pot and shake it really well until it’s a smooth dressing.

I store everything in Sistema boxes (I love Sistema) and put them in the fridge. I leave the croutons in the bread bin as they will go soggy in the fridge. So for a week long I can have a Caesar Salad whenever I fancy one. You can also take the boxes to work and whip a salad up for lunch or a small one as a snack on the train or in the car or wherever you go. Enjoy!
